Arabian Lazy Cake

Arabian Lazy Cake is a useful make-ahead sweet when you want chocolate cake flavors without baking a sponge. Broken tea biscuits give each slice its mosaic pattern, while a cooked cocoa and chocolate mixture binds them together in the refrigerator. This original home adaptation is based on the menu’s chocolate biscuit description and uses a small loaf pan for tidy portions. The biscuits should remain recognizable rather than becoming crumbs. Once chilled, the cake slices neatly and offers a satisfying contrast between its smooth chocolate coating and softened but still structured biscuit pieces.

Ingredients

  • 200 g plain tea biscuits or petit beurre biscuits
  • 80 g unsalted butter
  • 35 g unsweetened cocoa powder
  • 60 g granulated sugar
  • 100 ml whole milk
  • 80 g dark chocolate, chopped
  • 1/2 tsp vanilla extract

Method

  1. Line a small 20 by 10 cm loaf pan with baking parchment, leaving overhang to lift the cake out.

  2. Break the biscuits into irregular 1–2 cm pieces in a large bowl, keeping some larger pieces for a patterned slice.

  3. Combine butter, cocoa, sugar and milk in a saucepan. Heat gently, whisking, until smooth and steaming, then cook over low heat for 2 minutes.

  4. Remove from the heat, add the chocolate and vanilla and stir until melted. Cool for 5 minutes so the mixture is warm rather than hot.

  5. Fold the chocolate mixture through the biscuits until every piece is coated. Press firmly into the lined pan, especially at the corners.

  6. Cover and refrigerate for at least 4 hours until solid. Lift out, remove the paper and slice into eight portions with a warm, dry knife.

Make it your own.

  • Leave visible biscuit pieces instead of crushing everything to crumbs.
  • Pack the mixture firmly to prevent loose pockets that crumble when cut.
  • Keep the cake refrigerated and let a slice stand for 5 minutes before eating for a softer chocolate texture.
