Martini
A Martini concentrates attention on the spirit and vermouth, with dilution and temperature providing much of its texture. This home recipe offers a classic gin version and a direct vodka substitution, reflecting the choice of spirit described on Beiruty’s menu. Stirring with ice keeps the drink clear and smooth; a chilled small glass helps it retain that character after pouring. Dry vermouth is an active ingredient, not just a rinse, so choose a fresh bottle. Finish with either a lemon twist or an olive according to the aroma you want beside the spirit.

- 60 ml London dry gin OR vodka

- 1 small strip lemon peel OR 1 pitted green olive
Method
Chill a small cocktail glass in the refrigerator.

Squeeze the lemon peel over the surface and add it, or garnish with the olive instead.
Make it your own.
- Refrigerate opened dry vermouth to preserve its fresh character.
- For a softer Martini, increase vermouth to 20 ml; do not compensate by skipping proper chilling.
