Naji Magic
Naji Magic brings cold pistachio mastic ice cream, crunchy nuts and a cloud of cotton candy into one playful dessert. This home assembly takes its inspiration from the menu description rather than claiming to reproduce the restaurant’s preparation. Purchased mastic ice cream makes the recipe practical while preserving its distinctive aromatic character. The most useful technique is timing: chill the bowls, portion the ice cream first and add the cotton candy only when everyone is ready to eat. Serve small portions after a generous meal, with Turkish coffee alongside if you like.

Ingredients
- 600 g purchased pistachio mastic ice cream
- 40 g unsalted shelled pistachios, finely chopped
- 40 g plain cotton candy
Method
Put four dessert bowls and a tray in the freezer for 10 minutes. Keep the cotton candy sealed at room temperature.
Scoop the ice cream into eight portions and set them on the chilled tray. Return it to the freezer while preparing the garnish.
Divide the pistachios between the bowls, reserving 1 tablespoon for the tops. Add two ice cream scoops to each bowl.
Sprinkle with the reserved pistachios. Gently pull the cotton candy into four loose nests and set one over each portion immediately before serving.
Make it your own.
- Use ice cream explicitly labeled with mastic if you want the aromatic flavor described on the menu.
- Keep cotton candy away from condensation; it collapses quickly against wet bowls and melting ice cream.
- Check both the ice cream and garnish labels for nuts and other allergens.
