Strawberry
A strawberry drink should taste clearly of the fruit rather than only of added sweetness. This home preparation blends ripe berries with water and a measured amount of syrup, then uses lime to brighten the finish. It follows the refreshing style of an agua fresca while serving as an original interpretation of the menu’s strawberry selection. Strain it for a smoother glass or keep the fine pulp for a fuller texture. Because strawberries differ in sweetness through the season, choose fragrant ripe fruit first and taste the mixture before pouring it over ice.

Ingredients
- 400 g ripe strawberries, washed and hulled
- 600 ml water, divided
- 40 g granulated sugar
- 20 ml freshly squeezed lime juice
- 200 g ice cubes
Method
Warm 100 ml water with the sugar in a small saucepan for 2–3 minutes, stirring until dissolved. Set aside to cool for 20 minutes.
Cut the strawberries in half and put them in a blender with the remaining 500 ml water, lime juice and cooled syrup.
Blend for 30–45 seconds until smooth. Pour through a sieve for a lighter texture, or leave unstrained if you like the fruit pulp.
Fill four glasses with the ice and divide the strawberry drink between them. Stir and serve immediately.
Make it your own.
- Use ripe aromatic berries; pale, underripe fruit makes a less flavorful drink.
- Rinse berries before hulling to prevent them from soaking up extra water.
- Prepare the syrup in advance, but blend the fruit close to serving for the freshest aroma.
