Cucumber Mint Refresher
Cucumber, lime and mint give this vodka highball a fresh aromatic profile without the sweetness of a tropical juice cocktail. The Beiruty menu describes cucumber-and-lime vodka; this home adaptation uses that style when available and provides a clear alternative using plain vodka and fresh produce. Lightly pressing the mint is enough to release its scent. Chilled soda lengthens the drink while leaving its cucumber character easy to recognize. Assemble it in a tall glass just before serving, and keep the garnish simple so it does not crowd the ice or interfere with drinking.

Ingredients
- 45 ml cucumber-and-lime-flavored vodka OR 45 ml plain Grey Goose vodka
- 6 mint leaves
- 120 ml chilled club soda
- 150 g ice cubes
- 2 thin cucumber ribbons, about 10 g
- For plain-vodka substitution only: 15 g diced cucumber and 10 ml fresh lime juice
Method
If using plain vodka, lightly crush the diced cucumber with the lime juice in a small jug, add the vodka and strain into a tall glass. Otherwise pour the flavored vodka directly into the glass.
Add the mint leaves and press very lightly with a spoon.
Add the ice and cucumber ribbons, then pour in the chilled soda.
Stir once from bottom to top and serve.
Make it your own.
- Use unwaxed cucumber or wash its skin thoroughly before cutting ribbons.
- Do not add extra lime automatically when using a citrus-flavored vodka; taste the finished drink first.
