Kibbeh neyeh — cooked home adaptation
Traditional kibbeh neyeh is known for its raw beef and fine bulgur. For home cooking, this clearly labeled cooked adaptation brings the same ingredient family together as a warm, finely textured beef-and-bulgur dish. Mint, onion and gentle spices keep the flavor fresh, with a thermometer providing a clear cooking endpoint. This is an original home-style interpretation inspired by the menu’s ingredients, rather than Beiruty’s restaurant formula. Quantities are written for a domestic kitchen so you can prepare the dish confidently and adjust the final seasoning to your own taste. The independent recipe linked below provides another cook’s perspective and useful background for exploring this style of food at home.

Ingredients
- 500 g ground beef
- 90 g fine bulgur
- 150 ml boiling water
- 80 g onion, finely minced
- 15 g mint, chopped
- 30 ml olive oil
- 1/2 tsp allspice
- 1/2 tsp cumin
- 3/4 tsp salt
- 1/4 tsp black pepper
Method
This is a cooked beef-and-bulgur home adaptation of kibbeh neyeh; it is not a raw kibbeh recipe. Put bulgur in a heatproof bowl, pour over boiling water, cover and stand 20 minutes until tender.
Soften onion in oil in a skillet for 5 minutes. Add beef, allspice, cumin, salt and pepper, breaking meat into fine crumbs.
Cook, stirring, until all beef reaches 71°C/160°F on a food thermometer. Fold in hydrated bulgur and heat together for 2 minutes.
Remove from heat, stir in mint and serve warm with vegetables and pita. Refrigerate leftovers within 2 hours.
Make it your own.
- Traditional kibbeh neyeh is raw; this version deliberately cooks all ground beef.
- Use fine bulgur so it hydrates evenly without a long simmer.
